CHICKEN ROTEL 
4 chicken breasts
1 can cream of mushroom soup
1 (1 lb.) pkg. Velveeta cheese
1 can diced Rotel tomatoes
Tortilla chips

Boil chicken breasts and remove meat from bone. Chop meat. Mix mushroom soup, Rotel tomatoes, and diced chicken. In casserole dish, layer tortilla chips, chicken mixture, and cheese. Repeat. Bake at 350 degrees for 30 minutes.

I would use cream of chicken, celery or onion and grated sharp cheddar rather than mushroom and Velveeta because of personal taste preferences. But, I do plan to try this.
