LOW FAT CHEESE CAKE 
3 eggs
8 oz. low fat cottage cheese
8 oz. Neufchatel cheese (light Philly cream cheese)
11 tbsp. sugar
1/4 tsp. lemon peel, grated fine
1 tsp. lemon juice
1 tsp. vanilla
1/4 c. cornstarch
1 tsp. baking powder

Mix in blender: eggs, cottage cheese, Neufchatel cheese (light Philly cream cheese) and sugar. Add lemon peel, lemon juice and vanilla; blend. Add cornstarch and baking powder. Mix until smooth in blender. Pour into 8" or 9" springform pan. Bake at 350 degrees for 55 to 60 minutes. Let cool. Freeze or refrigerate. Top with fresh fruit or eat alone. Serves 12. You'll never miss the fat. 127 calories per slice.
