RICE SALAD 
2 c. uncooked rice
5 c. chicken broth (fresh or canned)

Cook until done, approximately 1/2 hour.

1 c. chopped stuffed olives
1 c. chopped celery
1/2 c. chopped parsley
2 tbsp. chives
1 c. mayonnaise
Sprinkle some oregano
2 sm. jars artichokes (save liquid)
2 med. chopped tomatoes (optional)

Mix with artichoke liquid. pour over all ingredients and mix well. Serves approximately 8.
