BROWN EDGED WAFERS 
1 c. unsalted butter, room temperature
1 c. sugar
2 egg whites
2 tsp. vanilla
1 1/2 tsp. freshly grated orange peel
1/8 tsp. salt
1 1/2 c. plain flour

Preheat oven to 325 degrees.

Beat the butter and sugar until light and fluffy. Beat in the unbeaten egg whites, orange peel and vanilla until well blended. Add the flour and blended slowly.

Lightly butter a long baking sheet. Place in oven until hot, about 2 minutes. Drop cookie batter by teaspoonfuls about 2" apart. Bake until edges are brown, about 7 to 9 minutes. Remove with a spatula to wax paper. Store in air tight container. Makes about 4 dozen.
