RAISIN-RICE PUDDING | |
4 eggs 2 c. milk 1 1/2 tsp. lemon juice 1 tbsp. butter, melted 2/3 c. raisins 3/4 c. sugar 1 1/3 c. cooked long-grain rice 1 1/2 tsp. vanilla extract 1 tsp. ground nutmeg Combine eggs, sugar, and milk; beat at medium speed of an electric mixer 1 to 2 minutes or until sugar dissolves. Add remaining ingredients, stir well. Pour into a greased 1 1/2-quart casserole; place casserole in a baking pan. Pour boiling water into baking pan to depth of 1-inch. Bake, uncovered, at 350 degrees for 40 to 45 minutes or until mixture is slightly thickened. Stir and bake an additional 10 to 15 minutes or until set. Serve warm or at room temperature. Yield: 6 servings. |
