MANDARIN ORANGE SALAD 
This really is delicious with chicken as a side dish!

2 pkgs. orange jello
1 1/2 c. boiling water
1 1/2 c. cold water
6 oz. frozen orange juice
#2 can crushed pineapple (in syrup)
2 c. mandarin oranges
1 pkg. Jello lemon pudding and pie filling
1 c. Cool Whip

Dissolve jello in 9x13 pan with hot water. When completely dissolved, add cold water and frozen orange juice. (The frozen juice helps to cool jello.) Refrigerate until partially set; add pineapple and oranges. After jello is firmly set, combine pie filling (according to package directions). Add to pie filling the Cool Whip; blend together. Spread mixture on top of jello. Garnish with mandarin orange slices and serve.
