BRANSCUM'S CHILI | |
1 lb. beef stew meat, cubed 1/2 lb. pork, cubed 4 tbsp. oil 1 1/2 c. chopped onions 1 c. green pepper, chopped 2 tbsp. minced garlic 1 tbsp. chili powder 1 1/2 tbsp. salt 1/2 tsp. thyme 1/2 tsp. cumin 1 1/2 c. water 1 (8 oz.) can tomato sauce 1/2 oz. unsweetened chocolate 1 (30 oz.) can kidney beans 3 c. chopped rind Cut beef and pork into bite size pieces. Heat 3 tablespoon oil in Dutch oven, brown meat well. Add rest of oil, onion, green pepper and garlic. Cook until soft but not browned. Stir in chili powder, salt, thyme and cumin. Cook 1 minute. Add water, heat to boil. Reduce heat to low, cover and simmer 45 minutes. Stir in tomato sauce and chocolate. Simmer uncovered 25 to 30 minutes or until thickened. Serve chili on bed of beans and rice. |
