CLUB CHICKEN CASSEROLE 
1/4 c. butter
1/4 c. flour
1 c. chicken broth
1 can mushroom soup
Dash of red pepper
3 c. cooked rice (I use whole grain)
1/4 c. chopped pimento
1 med. onion, diced
1 1/2 c. grated cheese
1 (2 1/2 to 3 lb.) chicken, cooked with 1 1/2 tsp. salt

Bone chicken and chop coarsely. Melt butter, blend flour. Gradually add chicken broth. Cook until thick, stirring constantly. Blend in mushroom soup. Add red pepper. Mix all ingredients except cheese. Put in large casserole dish. Sprinkle cheese on top. Bake at 350 degrees for 30 minutes.
