EVER SO EASY FRUITCAKE | |
2 1/2 c. sifted all-purpose flour 1 tsp. baking soda 2 eggs, slightly beaten 1 (28 oz.) jar None Such mincemeat (regular or brandy and rum) 1 (14 oz.) can sweetened condensed milk 2 c. (1 lb.) mixed candied fruit 1 c. walnuts, coarsely chopped Butter a 9-inch tube pan or spring-form pan. Line with wax paper. Butter again. Sift flour and baking soda. Combine eggs mincemeat, sweetened condensed milk, fruit and nuts. Fold in dry ingredients. Pour into prepared pan. Bake in a slow (300°F) oven for two hours until center springs back when lightly touched and top is golden. Cool. Turn out of pan and remove paper. Note: You can also use two (9-ounce) boxes of condensed None Such mincemeat. Crumble in saucepan. Add 1 1/2 cups of water. Heat and stir until lumps are broken. Boil 1 minute. Cool. |
