SPENO'S FRUITCAKE OR BANANA
BREAD
 
1 c. sugar
1 c. (8 oz.) liquid butter
2 eggs, beaten (or 3 egg whites)
2 tbsp. honey

Cream all this with wood spoon.

Add:

2 c. all-purpose flour
1 tsp. baking soda
4 to 6 over-ripe bananas (squeeze in hand until mushy)

Mix all up!

Add one or all of the following:

1/2 lb. chopped walnuts
1/2 lb. (8 oz.) "Old English Candied Fruit and Peel Mix"

(Like for fruitcake) OR, raisins or chopped dried fruit.

Bake in 325 degree preheated oven - 1 hour (put loaf pans on a cookie sheet - easy in and out). When done remove loaves and cool on wire rack. Store each loaf in a quart size zip-lock bag in refrigerator. Makes 2 large loaves or 6 - 5 x 3 x 2 inch loaves.
