SAUSAGE AND POTATO CASSEROLE 
5 to 6 lg. potatoes, peeled and sliced
2 to 3 lbs. Ekrich sausage, sliced
1 can cream of mushroom soup
1 med. box Velveeta cheese
1/2 c. chopped onion

Melt cheese and combine with soup and onion. Mix potatoes, sausage and soup mixture together and pour into casserole dish sprayed with non-stick spray. Bake at 400 degrees until potatoes are tender and cheese sauce is thick.
