HARVEST CASSEROLE 
2 tbsp. butter
5 c. green cabbage
1 med. onion, cut into halves and sliced
1 c. sliced carrots
1 can (drained) carrots
1 can stewed tomatoes
1 tbsp. vinegar
1/3 c. grated Parmesan cheese
2 tbsp. flour
Dash salt and pepper
1 lb. Lite smoked sausage

Heat oven to 350 degrees. Melt butter in Dutch oven over medium high heat. Add cabbage, onion and carrots, saute 5 minutes. Stir in beans, tomatoes and vinegar. Sprinkle cheese, flour and pepper over cabbage mixture. Stir.

Spoon into greased 6 quart casserole. Cut sausage into serving size pieces. Arrange on top of cabbage mixture and push down partially. Cover and bake 40 minutes or until hot.
