COVERED WAGON BRUNCH 
5 tbsp. butter
3/4 c. chopped onion
1 1/2 c. diced ham
6 eggs
3 tbsp. chives
1 c. grated cheddar cheese
1/2 c. half and half
1/4 tsp. salt
Pepper
1 (12 oz.) pkg. hash browns

Cook onion in butter until soft, not brown. Add ham and cook 5 minutes. Beat eggs, add chives, cheese, cream and seasonings together. Blend in onions and ham; add hash browns and stir. Pour into 8"x12" baking dish. Bake at 375 degrees for 30 to 40 minutes until brown. Can be made the night before refrigerated and baked in morning. I tripled this and baked in 2 (9"x13") pans for 12 to 15 people. Good with fresh fruit cup, English muffins or muffins. This was made for us on the Camp Courage Wagon Train.
