CURRIED CHICKEN SALAD 
4 c. boneless chicken, diced, cooked, skinless
1 (1 oz.) can pineapple chunks (reserve 2 tbsp. juice)
1/4 c. celery, chopped
1/3 c. raisins
1/3 c. pecans (or your choice)
2/3 c. Miracle Whip (may use fat free)
1 tbsp. Dijon mustard
3/4 tsp. curry powder
1/8 tsp. salt
2 tbsp. pineapple juice

Mix together and toss well with chicken mixture. Serve on salad green and garnish as desired.
