THUMB PRINT COOKIES 
1/2 c. butter
1/4 c. brown sugar
1 egg, separated
1/2 tsp. vanilla
1 c. flour
1/4 tsp. salt
3/4-1 c. ground nuts

Mix butter, sugar, egg yolk and vanilla. Cream well. Mix salt, flour and add to creamed mixture.

Form into balls about the size of walnut. Dip in beaten egg white and roll in nuts. Use only ungreased cookie sheets. Bake 5 minutes at 375 degrees. Remove and indent. I use a small melon ball cutter. Return to oven at 350 degrees and bake 10-12 minutes. Cool and fill with your choice. Makes about 3-4 dozen.
