MARINATED TOMATO SALAD WITH
SALAD DRESSING VERDE
 
1 zucchini or cucumber, thinly sliced
1 green bell pepper, slivered
1 sm. onion, thinly sliced
2 med. tomatoes, cut into thin wedges
1/2 c. ripe olives
1/2 c. salad oil
1/4 c. La Victoria Green Taco Sauce
1/4 c. fresh lemon juice or vinegar
1/2 tsp. salt
1/2 tsp. garlic powder

Combine vegetables together in a large salad bowl.

Prepare dressing by combining oil, Green Taco Sauce, lemon juice or vinegar, salt and garlic powder in a large shaker jar. Cover and shake well to blend.

Drizzle dressing over salad; toss gently to coat with dressing. Cover and chill 1 hour before serving to blend flavors. Makes 1 cup dressing.
