CHICKEN SOUFFLE 
1 pkg. stuffing mix
3 c. cubed chicken or turkey
1/3 c. butter
1/2 c. flour
1/4 tsp. salt
Dash pepper
4 c. broth
6 eggs

SAUCE:

1 c. mushroom soup
1/4 c. milk
1 c. sour cream
1/4 c. chopped pimento

Make stuffing according to package, layer it in a 9 x 13 pan. Top with 3 cups cubed chicken or turkey. Heat butter, flour, salt, pepper and broth in medium pan. When warm, add 6 eggs, beaten. Cook over medium heat until thickened. Pour over layers. Bake at 325 degrees for 45 minutes. Cool 5 minutes. Heat 1 cup mushroom soup, 1/4 cup milk, 1 cup sour cream, 1/4 cup chopped pimento. Serve with souffle.
