MIXED VEGETABLES | |
1 (16 oz.) favorite frozen mixed vegetables (or fresh vegetables of choice) 1 stick butter 1 med. onion, chopped 2 cloves garlic, cut in very sm. pieces or put through a press 2 c. brown rice, cooked 1 med. pepper (green or red) 1 lb. ham in chunk, cut in sm. pieces 2 c. milk 1/2 c. flour (unbleached) 2 tbsp. chives (dried or fresh) Cook in large pot the onion and pepper and garlic halfway with butter, then add frozen vegetables; put aside. Place milk in a new pot. Heat until hot, add flour with water to dissolve and make a thick liquid. Stir well and get all lumps out. Then add to milk slowly, stirring well. When thickened, add chives, ham and all the cooked vegetables; stir. Serve over the cooked rice. Serve with salad and rolls. Serves 5 to 7 people. |
