DEEP DISH PIZZA WITH TOMATO &
SAUSAGE
 
Whole wheat pizza dough
2 (16 oz.) cans plum tomatoes
2 cloves garlic
2 tsp. basil
1/2 lb. Mozzarella cheese (2 c. grated)
3/4 lb. Italian sausage
Cornmeal for sprinkling
1 tbsp. olive oil

Make dough. Heat oven to 475 degrees. Drain tomatoes. Coarsely chop and drain again. Mince garlic and combine with tomatoes and basil. Grate cheese. Crumble sausage and brown in a frying pan. Drain on paper towels. Oil a 10" cast iron frying pan or 9" to 10" spring form pan and sprinkle with cornmeal. Press dough into pan and push up the sides. Brush with oil. Add sausage and top with half of tomato mixture. Sprinkle cheese over tomato and top with remaining tomato mixture. Bake until crust is golden, about 15 to 20 minutes.
