CHOCOLATE ZUCCHINI CAKE 
1/2 c. butter
1 3/4 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. oil
1/2 c. milk (sour with 1 tsp. lemon juice)
2 1/2 c. flour
4 heaping tbsp. cocoa
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
2 c. finely grated zucchini

Beat first 6 ingredients together. Batter will be thick and fluffy. Stir dry ingredients together and add to moist ingredients. Fold in zucchini. Put into greased and floured 9x13 inch cake pan. Sprinkle with powdered sugar when done.

OPTIONAL TOPPING (put on before baking) :

1/2 c. sugar
1/4 c. nuts
1/2 c. chocolate chips

Bake at 325 degrees for 35-40 minutes.
