TOMATO SOUP 
3 tbsp. butter, melted
1 med. onion, cut into chunks
1 (6 oz.) can tomato paste
2 (14 oz.) cans chicken broth
1 lg. tomato, finely chopped, juice reserved
Salt, to taste
Croutons, for garnish
Swiss cheese, grated, for garnish
Sour cream, for garnish

Puree butter, onion and tomato paste in food processor or blender. Pour into a large pan and cook over high heat, stirring until puree boils vigorously. Add broth, chopped tomato and reserved juice. Heat through. Add salt to taste. Serve with garnish of your choice.
