QUICK PINEAPPLE PICKLES | |
1 lg. can pineapple chunks 3/4 c. cider vinegar 1 c. sugar 1/8 tsp. salt 1 tsp. coriander seeds 8 allspice berries 4 whole cloves 2 sticks cinnamon Red food coloring Drain pineapple, saving 3/4 cup syrup. Put the syrup and vinegar, sugar and all of the spices in a large saucepan. Cook over low heat for 15 minutes. Add pineapple, bring to a boil and cook for 5 minutes. Remove from heat. Add a few drops food coloring and pour into a container with a tight fitting lid. Refrigerate overnight before serving. |
