LINGUINE WITH TUNA & BLACK
OLIVES
 
1 can solid white albacore tuna in water
2 (8 oz.) cans tomato sauce
1 c. pitted sm. black olives, chopped
2 cloves garlic, minced or crushed
2 tbsp. olive oil
2 tsp. oregano
1 tbsp. capers (optional)
1 lb. linguine
Salt & pepper to taste

1. Heat olive oil in pan. Add garlic and saute.

2. Add tomato sauce and 1 cup water. Add flaked tuna and olives, oregano, salt and pepper. Bring sauce to a boil, uncovered, and then simmer with pan partially covered for 10 minutes.

3. Cook linguine according to package instructions. Serve with sauce and Parmesan cheese.
