CREAM OF CARROT SOUP 
1 tbsp. oil
3 med. carrots, sliced
1/2 med. onion, chopped
1 sm. potato, diced
1/2 tsp. garlic
1/2 tsp. sea salt
1/4 tsp. black pepper
Pinch cayenne pepper
1 c. water
1/2 - 1 c. soy milk

In a soup pot, saute onion and carrots in oil until soft. Add seasonings and saute a couple of minutes longer. Add potato and water. Cook 10 to 15 minutes or until potato and carrots are soft. Blend entire mixture until smooth and creamy thinning with broth and soy milk as desired. Adjust seasoning. Cook an additional 15 minutes on low heat. Serves 4 to 6.
