1/3 c. butter
1 c. sugar
1 tsp. coconut extract
1 egg
1 c. biscuit mix, packed
1 c. instant potatoes, packed

Cream together butter, sugar and coconut extract. Add egg and beat. Stir in biscuit mix and instant potatoes. Cover bowl and chill for 1 hour. Preheat oven to 350 degrees. Shape dough into marble size balls and place 2 inches apart on ungreased baking sheet. Bake on center rack for 10 minutes. Makes 4 dozen.
