CHEESE FRIED CHICKEN 
1 c. dry bread crumbs
1/3 c. grated Parmesan and Romano cheese
1/4 to 1/2 c. chopped parsley
Salt and pepper as desired
Pieces of chicken (breasts, thighs, legs, whatever desired, to equal 1
chicken)
1 c. butter, melted
Dots of butter

Mix together the bread crumbs and cheese, adding the parsley and salt and pepper. Dip the pieces of chicken into the melted butter, then roll into crumb mixture, begin sure each piece is well coated. Arrange pieces in a single layer in a shallow pan. Pour over any of the melted butter that was not used on chicken, adding dots of butter on top if necessary. Bake at 350 degrees for 1 hour or until tender. Yields: 3 to 4 servings.
