BANANA PANCAKES 
2 c. flour
2 tbsp. brown sugar
1 tbsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. milk or evaporated milk
1/2 c. mashed ripe banana
2 eggs
2 tbsp. vegetable oil

Combine dry ingredients in bowl. Mix last 4 ingredients in separate bowl. Then stir together just until moistened (batter will be thick, if you desire thinner batter add milk, if you would like it thicker add a little more flour). Serve with maple syrup or your favorite syrup or with Honey Pecan Sauce.

Honey Pecan Sauce: Mix 1/3 cup warmed honey and 1/2 cup chopped pecans.
