PORK CHOPS AND RICE 
6 pork chops
2 tbsp. shortening
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. uncooked rice
3 1/2 c. chicken bouillon
1/2 c. onion
1/2 c. diced green peppers (optional)
1/4 tsp. thyme (optional)

Brown pork chops in shortening. Remove from skillet and season with salt and pepper. Brown rice in skillet, stirring constantly. Add remaining ingredients. Pour into 3 quart casserole. Place chops on top. Cover and bake in 350 oven for 1 hour. Serves 6.
