SPINACH QUICHE 
1 pkg. frozen chopped spinach
4 eggs, beaten
4 slices bacon, fried and broken in pieces
1/2 tsp. salt
1/2 tsp. dry mustard
1 c. (or more) shredded Cheddar cheese
1 (9 inch) pie shell
1/4 c. more cheese for topping
2 c. skim milk
1/4 c. finely chopped onions
1/4 tsp. paprika

Cook spinach and drain well, mix remaining ingredients and add to spinach. Put in unbaked pie shell. Sprinkle 1/4 cup or more cheese on top. Bake at 400 degrees for 40 minutes or until set. Makes 6 servings. For variety use broccoli, extra bacon, Cheddar, Swiss. ENJOY!
