SALMON MOUSSE 
1 env. unflavored gelatin
1/4 c. cold water
3/4 c. boiling water
2 tbsp. sugar
1 tbsp. vinegar
2 tsp. grated onion
1/2 tsp. salt
1/2 tsp. horseradish, red
1 tbsp. lemon juice
1 lb. salmon, flaked
1/2 c. mayonnaise
1/3 c. sliced olives
1/4 c. celery

Soften gelatin in cold water. Add boiling water. Stir to dissolve. Add sugar, lemon, vinegar, onion salt, and horseradish. Chill until partially set. Stir in rest of ingredients. Pour into 3 cup mold and chill 5 hours.
