POT ROAST WITH RICE 
1 (4 lb.) lean chuck roast
3 tsp. salt
1/4 tsp. pepper
1 c. uncooked rice

Brown meat on both sides in oil in skillet. Salt and pepper.

Place heavy duty aluminum foil in baking dish, enough to wrap and seal roast. Place meat in foil and pour drippings from pan over all. Seal foil and bake in 250 degree oven 3 hours. Open foil, saving the juice; add rice to juice and seal it again. Bake about 1 hour longer until rice is tender.
