RED KIDNEY BEAN SALAD 
1 can red kidney beans
1/2 c. chopped parsley
1/2 c. chopped scallions
1 lemon, squeezed
1/4 c. olive oil
1/2 clove garlic
1 tsp. salt

Drain kidney beans and put in bowl. Add chopped parsley and scallions. Mix well. Mix lemon, oil, mashed garlic and salt. Pour liquid over beans. Mix thoroughly and refrigerate.
