60 SECOND CHEESE DIP (SINGLE
SERVING)
 
This recipe takes advantage of the sodium citrate content found in American Cheese slices. The half slice has enough emulsifying power to support a whole cup of cheese sauce. Feel free to substitute Cheddar with any other cheese.

1 tbsp. Greek yogurt
2 tbsp. milk
1/2 cup shredded cheddar cheese
1/2 slice (0.6 oz.) American cheese

Drop all ingredients into a microwave safe bowl. Don't worry about mixing them at first. Microwave for 45 seconds on High. Stir to combine melted ingredients, until no white streaks remain.
