APPLESAUCE-RHUBARB MUFFINS 
2 c. flour
1 c. whole wheat flour
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 1/3 c. brown sugar
1 1/3 c. applesauce
1/2 c. oil
1 1/2 c. chopped rhubarb

In a large mixing bowl, stir together flour, whole wheat flour, baking powder, cinnamon, baking soda and salt.

In a medium mixing bowl, beat eggs, stir in brown sugar, applesauce and oil. Add egg mixture to flour mixture. Fold in rhubarb. Bake in 400 degree oven for 18 to 20 minutes.
