CHOCOLATE ZUCCHINI BREAD 
3 eggs beaten or 3/4 c. egg substitute
2 c. sugar
1 c. vegetable oil
4 tbsp. unsweetened cocoa
1 tsp. vanilla
2 c. grated zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. baking powder

Mix beaten eggs, or egg substitute, sugar, oil and cocoa. Add vanilla and zucchini and mix. Sift remaining dry ingredients and add to zucchini mixture and mix well.

Lightly grease 2 loaf pans. Pour bread batter into pans. Bake at 350 degrees for 50-60 minutes. Makes 2 loaves.

Tastes great with cream cheese icing!
