DEVILED CLAMS 
1 pt. or 2.7 oz. clams, drained or chopped
1/2 c. chopped celery
2 tbsp. chopped onion
1 clove garlic, finely chopped
1/4 c. butter, melted
1 tbsp. flour
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
3 drops Tabasco
1 tbsp. chili sauce
1 egg, beaten
1/2 c. cracker meal
2 tbsp. chopped parsley
2 tbsp. melted butter
1/2 c. dry bread crumbs

Preheat oven to 400 degrees. Cook celery, onion, garlic in butter until tender. Blend in flour and seasonings. Add clams and cook until thick, stirring constantly. Stir in hot sauce into beaten egg; add to remaining sauce, stirring constantly. Add cracker meal and parsley. Place in 6 individual casserole dishes, well greased. Combine melted butter and bread crumbs; sprinkle over clams. Bake in a hot oven at 400 degrees for 10 minutes or until brown. Serves 6.
