TOSSED PEPPERONI SALAD 
Sliced pepperoni
Black olives, sliced
Assorted greens
Monterey Jack cheese, cubed
Sweet onions, sliced thin

TOPPING:

Italian dressing
Optional, Parmesan cheese, grated
Assorted vegetables, if desired

Toss all ingredients lightly with Italian dressing, just before serving. Sprinkle Parmesan cheese over the top, if desired.

NOTE: This goes great with lasagna or spaghetti, or by itself as a light meal. Other raw vegetables may be added for color and variety. Some suggestions are chopped celery; sliced mushrooms, carrots, or radishes; broccoli or cauliflower florets; or try Spanish olives in place of the black olives.
