1/2 c. butter 1/2 c. brown sugar & brown sugar substitute equivalent to 1/2 c. brown sugar 1 egg 1/2 c. ground walnuts 6 tbsp. plain low fat yogurt 2/3 tsp. maple or black walnut flavoring 1 tsp. vanilla 1 1/2 c. all-purpose flour 1/2 tsp. salt 1/2 tsp. double acting baking powder Cream butter with sugar and sugar substitute. Add beaten egg, walnuts and yogurt; cream again; add the flavorings. Sift dry ingredients together. Gradually add dry ingredients to creamed mixture; beat well. Drop by teaspoons on cookie sheet sprayed with vegetable spray. Flatten with a fork if you wish. Bake at 375 degrees until edges are brown, about 15 minutes. Cool on rack; store in a tight container in a cool place or freeze. |
