SMITH BROS. LEMON MERINGUE PIE 
1 3/4 c. water
3/4 c. sugar
1 tsp. salt
Dash of yellow color

CORNSTARCH MIXTURE:

3 tbsp. cornstarch
1 tbsp. water

LEMON MIXTURE:

8 oz. lemon juice
1/2 c. egg yolks
1 tsp. sugar

Heat 1 3/4 cups water, 3/4 cup sugar and 1 teaspoon salt to a boil and add cornstarch mixture. Add lemon mixture and blend. Fill a 9 inch baked pie crust.

MERINGUE:

1 c. egg whites
1 c. sugar

Whip egg whites until very stiff and gradually add sugar, continuing to beat until very stiff. Top filled pie crust and bake for 15 minutes or until golden brown in a 400 degree oven.
