CHICKEN PICCATA 
2 lb. chicken breast, boneless

Dip in flour and then beaten egg; saute in butter. Place in tray. Pour chicken broth and white wine over chicken and bake at 350 degrees for 1/2 hour. Add thinly sliced Mozzarella on each piece and broil to melt. Pound chicken breast with mallet and use College Inn chicken broth or shredded Mozzarella cheese.
