WHOLE WHEAT BANANA BREAD | |
1 1/4 c. all-purpose flour 1/2 c. whole wheat flour 1 tsp. baking soda 1/4 tsp. salt 1/2 c. sugar 1/4 c. Puritan oil 1 egg 1 c. mashed ripe bananas, 2 med. 1 tsp. vanilla extract Vegetable cooking spray Combine first 4 ingredients in small bowl, stir well and set aside. Combine sugar and Puritan oil in a medium mixing bowl; beat at medium speed with electric mixer 2 minutes or until well blended. Add egg, beat until light and lemon-colored. With mixer running at low speed, add flour mixture alternately with banana, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla. Pour batter into an 8 x 4 x 2 inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in a pan on a wire rack; remove from pan and let cool completely on a wire rack. Yield: 16 servings. (About 120 calories per 1/2 inch slice.) |
