SPINACH FANDANGO 
1 lb. ground beef
1 med. onion, chopped
1 can mushrooms
1/2 tsp. garlic, chopped
1 tsp. oregano
Salt and pepper to taste
2 pkgs. frozen spinach
1 can celery soup
1 c. sour cream
2 lg. slices Monterey Jack or Mozzarella cheese

Brown beef, onions, mushrooms, garlic and oregano. Add salt and pepper. Top with frozen spinach. Cover and let steam until spinach separates. Add soup and sour cream. Put in casserole, top with cheese. Bake until heated through at 350 degrees.
