VANILLA CHIP FRUIT TART 
3/4 c. butter
1/2 c. confectioners sugar
1 1/2 c. all purpose flour
Vanilla filling
Fruit topping

Heat oven to 300 degrees. Beat butter and sugar until light and fluffy. Blend in flour. Press mixture on bottom and sides of round pizza pan. Bake 20-25 minutes until lightly browned. Cool completely. Prepare filling and spread on cooled crust. Cover and chill. Prepare fruit topping. Cover and chill. Assemble tart. Serves 10-12.

VANILLA FILLING:

1 2/3 (10 oz. pkg.) vanilla milk chips
1/4 c. whipped cream
1 (8 oz.) pkg. cream cheese, softened

In microwave melt chips and whipping cream (100%) for 1 to 1 1/2 minutes until chips are melted and mixture is smooth when stirred. Beat in cream cheese.

FRUIT TOPPING:

1/4 c. sugar
1 tbsp. cornstarch
1/2 c. pineapple juice
1/2 tsp. lemon juice
Assorted fresh fruit

In small pan, combine sugar, and cornstarch. Stir in juices. Cook over medium heat, stirring constantly until thickened. Cool. Slice and arrange fruits on vanilla filling. Pour juice mixture over fruit. Keep chilled.

Kiwi, strawberries, and peaches are great.

Since microwave ovens vary in power, you may need to adjust your cooking time.
