ENGLISH MUFFIN BREAD WITH WHOLE WHEAT | |
1 c. milk 2 tbsp. sugar 3 tbsp. butter 1 tsp. salt 1 pkg. yeast 3 1/2 c. unsifted flour 2 c. whole wheat Some cornmeal 1 c. warm water Warm milk. Stir in sugar, butter, salt and cool to luke warm. Place water in large warm bowl. Sprinkle yeast and stir until dissolved. Add milk mixture. Stir in whole wheat. Add enough additional flour to make soft dough. Turn out onto floured board. Knead 2 minutes. (May be sticky) Place in a greased bowl. Grease top of dough. Cover and let rise till double (about 1 hour). Punch down and divide in half. Shape loaves. Roll in cornmeal. Place in greased loaf pans and cover. Let rise until double. Preheat oven to 400 degrees and bake 25 minutes and remove from pans. |
