OYSTER CASSEROLE 
1 clove garlic, crushed
1/2 c. olive oil
3/4 c. grated Parmesan cheese
1/2 c. cracker meal
1/2 tsp. salt
1/4 tsp. pepper
1 qt. selected oysters, washed and drained
1/4 c. sherry

Preheat oven to 450 degrees. In bowl, place garlic and olive oil. In another bowl, mix the cheese, cracker meal, salt and pepper, combining well. Dip each oyster in the oil and then coat with cheese mixture. Arrange in a well buttered 9 x 13 baking dish. Sprinkle the top with the sherry. Bake 12 to 15 minutes or until oysters are lightly browned. Serves 6 to 8.
