FRESH PEACH KUCHEN 
2 lb. ripe peaches, peeled & sliced
2 tbsp. lemon juice

KUCHEN BATTER:

1 1/2 c. sifted flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
2 eggs
2 tbsp. milk
1 1/2 tbsp. grated lemon peel
1/4 c. butter, melted

TOPPING:

1/4 c. sugar
1/2 tsp. cinnamon
1 egg yolk
3 tbsp. heavy cream

Sprinkle sliced peaches with lemon juice. Sift flour with sugar, baking powder and salt. In mixing bowl using fork, beat eggs and milk and lemon peel. Add flour mixture and melted butter mixing until smooth 1 minute. Do not over mix.

Butter 9 inch springform pan. Turn batter into spread evenly over bottom. Drain peaches, arrange slices on batter, around sides of pan until fill center with slices too. Sprinkle evenly with sugar - cinnamon mixture.

Bake in a pre-heated 350°F. oven for 25 minutes. Remove kuchen from oven.

With fork beat egg yolk with cream. Pour over peaches. Bake 10 minutes longer. Cool 10 minutes on wire rack. Remove side of springform pan. Serve kuchen warm. Cut in wedges with sweetened whipped cream or soft ice cream.
