GINGER CHICKEN 
4 tbsp. butter
2 tbsp. minced onions
1 tsp. salt
1 tsp. ginger
2 tbsp. lemon juice
6 tbsp. honey
1/2 c. orange or lemon juice
2 tsp. soy sauce
1 (3 lb.) chicken

Combine all ingredients except chicken in pan and cook over low heat for 5 minutes. Marinate chicken in sauce for 12 hours. Bake chicken in oven at 350 degrees for 20 minutes. Turn chicken upside down, cover with half the ginger sauce and bake at 350 degrees for 20 minutes. Turn around again. Add remaining sauce and leave in hot oven for another few minutes. Serve with boiled rice.
