SPINACH QUICHE 
1 1/2 c. spinach
1 (9 inch) pie shell
4-5 slices crisp bacon, crumbled
4 thin slices onion, sauteed until soft
3 thin slices ham, shredded
4 lg. eggs, beaten
3/4 c. light cream
2 c. grated Swiss cheese
Nutmeg (optional)
1/2 tsp. processed mustard

Drain spinach well, set on paper towels to remove all liquid. Sprinkle bacon and onions in pie shell. Add 1/2 the ham, 1/2 the spinach over the ham, and top with 1/2 the cheese. Repeat layers of ham, spinach and cheese. Add mustard and cream to eggs, and pour on top. Let stand 10 minutes. Sprinkle nutmeg (if desired) on top and bake at 375 degrees for 15 minutes. Reduce to 325 degrees and bake for 30 minutes. 6 servings.
