MILKLESS, EGGLESS, BUTTERLESS
MUFFINS
 
Makes 2 dozen small muffins: oven temperature 400 degrees: baking time 45 minutes.

4 c. bread flour
2 tbsp. baking powder
1 tbsp. sugar
3/4 tsp. salt (omit if adding ham)
1 generous tsp. toasted caraway seeds
2 1/2 c. cold water

Add baking powder, sugar and salt to the flour and sift into a mixing bowl; stir in lightly toasted caraway seeds. Pour in the cold water all at once and stir just enough to dampen the flour. Spoon batter into hot, oiled muffin pans up to 2/3 full and bake until muffins are brown and leave sides of pans.

Optional: could add 1 1/2 cups finely chopped or shredded ham and 2 tablespoons minced fresh parsley for a heartier mix.
