TOMATO ONION RELISH 
2 lg. cloves garlic, finely chopped
1 tsp. olive oil
2 onions, halved and cut crosswise into thin half-rings
Pinch crushed red-pepper flakes
2 c. canned whole plum tomatoes, drained and chopped
2 tsp. red-wine vinegar
Pinch black pepper
2 tbsp. chopped fresh basil

Saute garlic in oil in medium-size nonstick saucepan until lightly browned, 1-2 minutes. Stir in onion and red pepper flakes; saute for 3 minutes, stirring often. Stir tomatoes into saucepan. Lower heat; cover and cook 5 minutes.
